After picking, the most ripe coffee cherries are carefully sorted and then washed to remove the outer fleshy fruit and dried in the sun on raised beds. A smaller selection of cherries are left unwashed and are dried in their natural form in the sun. This “natural process” preparation is a form of fermentation which helps to intensify the natural flavours and sweetness of the beans.
After drying and being sorted again for quality, screen size and colour at the regional hulling factory, the outer layers of skin and parchment are removed, the cleaned “green” coffee seeds are now packed into export bags and transported to us in Amsterdam. We expertly roast our coffees by hand in small batches to maximize the potential in each coffee bean. Each coffee has been chosen for its excellence (SCA score), minimal defects and perhaps most importantly of all, for the most intensive flavour. Be prepared for a real explosion of taste!
