We are absolutely thrilled to welcome this new coffee bean from the Huila department of Colombia into our Specialty coffee selection. Brought to us by our partners at Coffee Quest, the beautiful El Paraiso family farm is headed by Ernedis Rodriguez and sits at the rim top of a mountain 12km east of the town of Gigante, in the South West of the country. The coffee fields face west overlooking the Magdelena river valley.
The Caturra varietal lots have a friendly fruity character, but the base of the coffee has more sweetness of honey or sugar molasses. These special lots are Washed, but with extended fermentations to up to 72 hours. The main harvest is from May through early July.

This beautiful micro-lot coffee is fully washed but has used an extended fermentation process to create a beautifully balance of sweet and citrus, brown spices and marzipan. The natural underlying sweetness reveals itself first as a stone fruitiness and then more towards a caramel and cookies flavour. I love the medium to full body and the creamy texture of this coffee. It has a medium acidity to give it that extra bite as espresso and a light spice note. We have committed to buying this green coffee from El Paraíso for at least the next 1-2 years and we couldn’t be happier.
