Chocolate cake recipe for little and big celebrations

A wise man once said no celebrations are complete without a cake. Our newlywed colleague Ela, prepared us the chocolate slice cake, which we enjoyed after lunch with a nice cup of coffee.

Everyone at the Jones Brothers Coffee has their own favourite coffee (mine is Noir and Ela loves Sumatra) but what great is about this cake it goes well with all the coffee flavours we like.

The good news is Ela agreed to share the recipe with you. So here it goes!

Ingredients

  • 450g of vanilla biscuits
  • 225g of sultanas/ or any raisin chocolate bars you like
  • 3 tbsp of desiccated coconut
  • 190g of butter
  • 2 tablespoon (tbsp) of cocoa
  • 6 tbsp of milk
  • 8 tbsp of milk powder
  • 4 tbsp of caster sugar

For chocolate icing:

  • 75g of butter
  • 2 tbsp of cocoa
  • 350g of icing sugar
  • 1 teaspoon (tsp) of vanilla essence
  • 8 tbsp of boiling water
  • Desiccated coconut to sprinkle on the top

How to prepare it

Start with crushing the biscuits and put them aside. Melt the butter in a bowl (Ela used the microwave for it) and add cocoa, milk, milk powder and sugar mix until well combined. Then stir the crushed biscuits into the mixture. Place a baking paper on a baking tray with high walls allowing a 2cm overhang on the sides. Press the mix into slice tin and refrigerate.

Chocolate Icing

First, melt the butter once ready add cocoa, icing sugar, vanilla essence, and water. Mix it well. Pour it on the refrigerated batter and sprinkle the top with desiccated coconut and refrigerate.
