Where is Tolima?


Nestled in the heart of Colombia’s Andes mountains, Tolima is a hidden gem for coffee lovers. With its misty mountain peaks, rich volcanic soil, and passionate farmers, it produces some of the finest beans in the world. Tolima is located in west-central Colombia and is bordered by Huila to the south and Cundinamarca to the east. The region is known for its vibrant culture, excellent cuisine, traditional music, and, most importantly, its exceptional coffee. Produced at high altitudes on breathtaking mountains, coffee farming in Tolima remains largely in the hands of small, family-run operations, contributing to a careful, artisanal approach to coffee cultivation.


Tolima has a strong tradition of prioritizing organic and environmentally friendly coffee production. We work with the Primavera Friends of Tolima, specifically the Casifur cooperative, which has over 4,000 members and provides essential services, including agronomy assistance, education opportunities, and lines of credit for farm inputs. By maintaining a direct trade relationship with these farmers, we ensure better wages, sustainable farming practices, and continuous community development.


Our Bean


Our Colombian beans come from the Caturra and Castillo varieties, carefully cultivated by Casifur farmers at high altitudes of 1,400 to 2,000 meters above sea level. These beans are grown in the fertile volcanic soils of Planadas, San Antonio, Santa Luisa, and Chaparral, where the ideal microclimates create the perfect conditions for specialty coffee. The farmers use shade trees, particularly banana and walnut trees, to protect biodiversity and enhance the coffee’s natural flavor profile.


Expect a balanced cup with a heavy body and notes of red fruit acidity, dark chocolate and dark caramel. The high altitude contributes to a clean, crisp finish, making this coffee ideal for both espresso and filter brewing.


After being carefully hand-picked at peak ripeness, the coffee cherries undergo a meticulous washed process. This involves fermenting them in water to break down the mucilage before they are gently dried under the Colombian sun. This careful method preserves the coffee’s clarity and sweetness, ensuring a smooth and refined taste.
