Birthday cake, carrot cake!

No celebrations are complete without a cake, especially when it’s your birthday! We at Jones Brothers Coffee Company are celebrating our 3rd Birthday this month,so we think we deserve a birthday cake indeed!

As you probably know by now, we kinda have a sweet tooth for anything delicious here at Jones Brothers (there’s nothing like coffee and cake, right?) but the choice of a special birthday cake recipe was easy ­ it had to be Richard Jones’s all­time favourite – the carrot cake!

Delightful flavour, exquisite texture, very creamy… it should look great and taste even better. So have a look at our special recipe below, we’re pretty sure you’ll like it! And as a wise man once said, “True happiness is eating cake” We can only agree!

Ingredients

  • 250g of grated carrots
  • 170g of sugar
  • A handful of chopped nuts (we like walnuts, but you can use other nuts if you prefer or just skip them all together)
  • A handful of raisins
  • 1,5 teaspoon of salt
  • 2 teaspoons of baking soda
  • Spices: 1/4 teaspoon of nutmeg & 2 teaspoons of ground cinnamon
  • 250g all-­purpose flour
  • 1 teaspoon of pure vanilla extract
  • 3 eggs
  • 140ml vegetable oil

Ingredients for the cream cheese frosting:

  • 200g of full­fat cream cheese
  • 115g unsalted butter
  • 140g powdered sugar
  • 30­-45ml of heavy cream (35% fat cream­ “verse room” here in the Netherlands!)
  • 1 teaspoon of vanilla extract
  • Pinch of salt

How to make it:

  • Pre ­heat the oven to 350°​F or 180​°C​.Prepare your baking pan(we used a round 8 ­inch pan.)
  • Beat the sugar, oil, vanilla and eggs in a mixing bowl until they become a light yellow mixture.
  • Take a separate bowl and mix all the dry ingredients together: flour, cinnamon, nutmeg, baking soda, and salt.
  • Slowly and gently add in the dry ingredients to the egg mixture. Mix until they all combine.
  • Add raisins, walnuts, and carrots to the batter.
  • Pour the batter into the pan. Bake for 55 to 60 minutes. – Our tip: If you want to be sure that the cake is ready, take a toothpick and poke the cake. If the toothpick comes out clean, your cake is ready to be taken out.
  • Now comes the hard part because it requires patience: Don’t eat it just yet! You need to allow the cake to cool completely.
  • Cover the cake with cream cheese icing or in your favorite frosting.

How to make the frosting (it’s easy, we promise!):

Mix the cream cheese and butter (it needs to be soft!) in a large bowl and mix until it’s smooth. Add the powdered sugar and cream; beat until all ingredients are mixed well. Add vanilla extract and beat until batter is smooth and creamy. Add a pinch of salt at the end and you’re ready to go!

We love the cream cheese icing style; it adds a yummy flavour to the cake.
